Si bien las ferias comerciales y los discursos de ventas llenan el evento más grande, las competencias muestran una disparidad desconcertante entre la eficiencia intensa y silenciosa de los chefs en el trabajo, el ensamblaje de creaciones contra el reloj y los estridentes vítores que desgarran a la multitud. Muchos son amigos y familiares de los chefs competidores; otros son colegas de la industria o simplemente patriotas culinarios.
Es otra muestra de que estos concursos son considerados en serio en países que valoran su herencia culinaria como un bien cultural. Y es una prueba más del papel cada vez mayor de Nueva Orleans en ellos, al albergar semifinales de los concursos por primera vez el año pasado, es un gran problema.

Cuando Japón presentó su propuesta al panel de jueces (como todas las propuestas, un postre tremendamente complejo diseñado en torno a un motivo nacional), comenzó con una actuación de llamada y respuesta con tambores taiko tradicionales con los fanáticos.
¿Todo esto hizo una diferencia? Al final de la Copa Mundial de Pastelería, el equipo de Japón ganó el oro, y no fueron sólo los chefs quienes derramaron lágrimas de alegría por la victoria.
